these banana cupcakes I have been meaning to make for a while.
This recipe comes by way of Sharnel from mylife-myloves.blogspot.com.
These are the best banana cupcakes I have tasted and Sharnel suggests
making a double batch and freezing them so you can pop one in your
childs lunchbox each morning. I added 1/2 cup white chocolate chips
also and my daughters Emma and Hayley love them.
Banana Cake (cupcakes)
125g (4oz) butter
175g (6oz) sugar
2 eggs
2 large mashed ripe bananas (I use 3 med sized)
1 tsp Baking soda
2 Tbsp boiling milk
1 tsp baking power
225g (8oz) flour
Cream butter & sugar till light and fluffy.
Add eggs one at a time.
Mix in mashed bananas.
Add baking soda that has been dissolved in hot milk.
Lastly mix in sifted flour & baking powder.
I cook this as a cake in a 20cm ring pan on 180c for 40mins.
This mixture will produce around 18 standard size cupcakes and they are baked at 180c for approx 18-20mins (depending on you oven but you want them just to start browning on top).
