On the Easter weekend we had a stall at Camberwell Market..one of those carpark markets you rent a
stall at to sell your unwanted clothes and odds and ends. There were several stalls there selling flowers and I noticed throughout the morning these Dahlias were the first to go at each of them. They had bunches in the most beautiful colours...dark pink, red, yellow and as you can see I picked up a bunch of pink ones for $5 which I thought was so cheap.
To celebrate Spring in the northern hemisphere I thought I'd make some pretty cupcakes. These ones
are raspberry with rosewater & coconut icing (frosting).
They are so easy to make, I hope you'll give them a go.
Raspberry Cupcakes with Rosewater & Coconut Icing
125g unsalted butter, 125g caster sugar, 2 large eggs,
125g self raising flour (self rising), 1/2 tsp vanilla extract,
2-4 tablespoons milk, punnett of raspberries.
Heat oven to 180 degrees
Put all ingredients except for the milk and raspberries in a food processor and blitz until smooth. Pulse while adding milk down the funnel for a soft dropping consistency. Place patty pans in cupcake tray, you can spread the mixture across a dozen patty pans but if you want bigger ones like in my photos spread it across nine. Push some raspberries into each lot of mixture.
Place tray in oven and cook for 15-20 minutes or until cooked and golden on top (mine took 20 minutes).
Icing
250g unsalted butter, softened, 250g icing sugar (powdered sugar),
rosewater, milk.
Cut butter into cubes and beat with sifted icing sugar in electric mixer for five minutes, give it a stir & scrape down half way through. Then add a couple of drops of rosewater to taste and a tablespoon or two of milk (you want a spreading consistency) and beat for another minute
Ice cupcakes when cool and roll in coconut, top with a raspberry.

Oh my word Catherine-they are just the most beautiful colours. It's spurred me on to get some planted-they used to be my Dad's favourite flowers and he grew them everywhere!! Do you know, my Son Gabriel, now 6, has wanted to be a chef since he was 3. He has asked to make these delicious looking cupcakes and wants to start a blog just like yours!! xx

I am so flattered that Gabriel likes my blog, that is just so sweet and has totally made my night (writing this at 10.10pm).
