Happy New Year!!! I hope you all had a wonderful Christmas and New Years. I couldn't wait to start blogging again to show you all my latest Summer discovery. Drumroll....It's the best guilt free ice cream/frozen yoghurt you've ever tasted. It's so good. The cones in my pics could have done with topping up but there was none left as the family had demolished it all.
This recipe comes by way of Donna Hay. I bought her DVD "Fresh, Fast and Simple" sometime ago and then followed up with the book. I've been cooking lots of recipes from the book this summer, tonight we're having pasta with ricotta and prosciutto. I couldn't stop drooling over every dish as I watched the dvd. One recipe I found seriously droolworthy is this Mango and Banana Yoghurt Gelato. Northern Hemisphere readers you have to bookmark this one for when your weather warms up again.
It's so easy...you take two bananas, peel and cut the fruit up into chunks and do the same with three mangoes. Place fruits separately in two sealed containers or zip lock bag and place in the freezer till frozen (I froze mine overnight which I recommend).
Place frozen fruit and 1 cup of thick natural or vanilla yoghurt (I used no fat plain greek yoghurt) in the blender or food processor (I found the food processor works best) and blitz until smooth. I like to eat it straight away or pop into a sealed container and place in the freezer. Allow to soften for five minutes if serving straight from the freezer.
The creaminess comes from the banana as the base fruit ingredient. I'm going to experiment with some other flavours over the coming weeks (banana & raspberry, banana & strawberry). I hope you'll give it a try, your children will love it. So healthy for them. I'll let you know how I go with the other flavours in the coming weeks.
In the picture I punched some holes in the bottom of a cardboard egg carton as a stand for the ice creams and the pretty squares of paper help with drips.

I made something similar to this at a vego cooking class I went to...loved it! I think it had bananas and berries in it.
Who can resist a post with such an amazing title! Happy New Year, dear! We're actually headed into a warm up this weekend, so this might end up being a winter treat for me!
